I'm CK, listener of 97.2fm. Beginner of baking as well. Have seen your finished products, there all look very yummy. I have tried steaming the xiao fa gao a few times, using coconut or fresh milk. Your fa gao was very nice. Can I check with u the amount of coconut milk u have added? Base the Irene recipe, I find it's way too dry. All together I have added about 350g of coconut milk. I think mine didn't rise as nice as yours. As for using the fresh milk version, the result was no good. The fa gao didn't "smile" much. My sponge cake just rise for 1.3 inches. Result was no good. Irene said the sponge cake height should be about 2.5 inches. According to Irene, we should stir in the butter by hand, not machine. I have made this mistake the last time. Will try to bake again when the chocolate recipe is out. Got to get back to work now. Choa!
